Winemaking Process: The grapes are picked manually, sorted, and vinified with 60% whole harvests. During the 11 days of vatting, between 5 to 7 punching downs are carried out, as well as reassembly. After pressing, the wines are settled for 2 weeks and put in barrels. Breeding is made 100% in barrels aged 1 to 5 years. After 12 months of aging the wines are racked into vats, rested for 3 months, and bottled without filtration or fining. Age of vines: 30 years. Soils: Clay and limestone

Quy trình sản xuất:

Nho được thu hoạch thủ công, chọn lọc cẩn thận và lên men với 60% là chùm nho nguyên trái.

Trong 11 ngày ngâm ủ, thực hiện từ 5–7 lần dầm nho (pigeage) và bơm tuần hoàn (remontage).

Sau khi ép, rượu được lắng trong khoảng 2 tuần rồi chuyển vào thùng gỗ sồi đã qua sử dụng từ 1 đến 5 năm (100%).

Sau 12 tháng ủ, rượu được chuyển sang bể inox, nghỉ ngơi thêm 3 tháng rồi đóng chai mà không lọc hay làm trong.
