Taste Note: The nose is opulent and expressive, revealing layers of ripe and candied strawberries, blueberries and dark berries, intertwined with incense, vanilla and a touch of acacia blossom. Subtle notes of pepper and roasted coffee deepen the aromatic profile. On the palate, the wine is suave and seductive, with a generous core of fruit balanced by a savoury, spicy edge reminiscent of dried meat. The tannins are firm yet refined, supported by a vibrant freshness that brings lift and precision. A distinctive Pinot Noir with both charm and structure, offering immediate pleasure and ageing potential.
Winemaking Process: Hand-harvested grapes are carefully sorted and fermented with around 60% whole clusters, enhancing aromatic complexity and structural depth. A 15-day maceration with regular punch-downs and pump-overs allows for gentle yet thorough extraction. After pressing, the wine is settled for two weeks and aged in French oak barrels, including 30% new oak, for approximately 13 months. It is then rested in tank for 3 months before bottling without fining or filtration.
Sommelier Advice: Serve at 15–17°C in a Burgundy glass. Decanting for 30–45 minutes will enhance its aromatic depth and soften the tannins. Ideal with grilled or roasted meats, game sausages, and dishes with pepper or smoky elements. The wine will evolve gracefully over 8–12 years.
