Description

Brand: Matsu
Origin: Spain
Grape: Malvasía Castellana
Taste Note: The nose is intense and multi-layered, revealing ripe stone fruits such as apricot, peach and yellow plum, interwoven with tropical hints of pineapple and lifted by delicate white floral notes. Nuances of honey, beeswax, vanilla and anise add depth and sophistication. On the palate, the wine is rich and structured, combining a creamy texture with vibrant acidity. Powerful yet precise, it unfolds in layers with remarkable balance, leading to a long, elegant and textural finish.
Winemaking Process: Sourced from old bush vines aged between 50 and 150 years, planted on poor sandy soils, the grapes are co-fermented with other traditional varieties. Fermentation occurs spontaneously in new 600L French oak barrels, followed by 14 months of ageing on lees in the same lightly toasted barrels. This élevage enhances texture, aromatic complexity and integration while preserving varietal precision.
Sommelier Advice: Serve at 10–12°C in a Burgundy glass to fully express its aromatic complexity and texture. Ideal with grilled fish, octopus, paella, veal chops or creamy cheeses. Its structure also allows pairing with richer white meat dishes and oak-influenced cuisine. Decanting for 15–20 minutes is recommended to enhance aromatic openness.
