Tasting Notes: The color of Ruby Garnet. On the palate, the wine is dry and ample, with explosive aromas of red fruits and spices. A burst of fruit fills the palate. The freshness is pleasantly bright and contributes to the length.
Winemaking Process: Grapes are 100% hand-harvested and rigorously sorted. Grapes are carried to the cellar in a bin fitted with a vibrating system. Thanks to a vibrating table and the care of 6 to 8 persons grapes are sorted before being steamed. Then they are transported into the vats on a conveyor belt. Fermentation with natural yeasts starts after a cold maceration. Vatting lasts 20 to 25 days according to the vintage. This wine is aged in “tronc conique” oak vats for 18 months. No fining, or filtering on cellulose plates.
Sommelier Advice: At the table, it goes brilliantly with a filet mignon with pepper sauce, or a vegetarian lasagna.
