Taste Note: Bright and expressive, Incanto opens with an energetic burst of citrus—lime, citron and pink grapefruit—layered with white peach and crisp apple. Vermentino brings its signature Mediterranean lift of aromatic herbs and a subtle saline edge, while Ansonica adds a softer, sun-kissed roundness. The palate is vibrant and immediate, with precise acidity balanced by a gentle creaminess from lees ageing. A mineral-driven, savory finish lingers with clarity and finesse, inviting another sip.
Winemaking Process: Hand-harvested grapes are destemmed and gently pressed, followed by cold static clarification in stainless steel. Fermentation takes place under controlled temperature conditions to preserve freshness and aromatic precision. The wine is aged for approximately four months in stainless steel on fine lees, enhancing texture while maintaining purity and vibrancy.
Sommelier Advice: Serve well chilled at 6–8°C in a white wine glass to enhance its freshness and aromatic lift. No decanting required. Ideal with seafood crudo, shellfish, sushi and sashimi, or light Mediterranean dishes. Its saline and citrus-driven profile also pairs beautifully with dishes featuring herbs, citrus and delicate spices. Best enjoyed young, within 2–3 years, to capture its vibrant character.
