Taste Note: Bright and expressive, this organic Pecorino opens with aromas of citrus, white peach and crisp pear, layered with delicate white flowers and Mediterranean herbs. The palate is vibrant and refreshing, driven by lively acidity and a subtle mineral-saline character. Stainless steel ageing preserves the wine’s purity and precision, leading to a clean, energetic and persistent finish.
Winemaking Process: Produced from organically farmed estate vineyards in Abruzzo, the grapes are cultivated on medium-textured soils with east/north-east exposure at 121 metres altitude. After hand selection, vinification takes place in temperature-controlled stainless steel tanks to preserve aromatic freshness and varietal purity. The wine is aged for two months in stainless steel before bottling, maintaining its vibrant fruit profile and mineral precision.
Sommelier Advice: Serve at 10–12°C in a medium-sized white wine glass. Ideal with oysters, seafood crudo, grilled prawns, fresh cheeses, sushi, or light Mediterranean dishes. Best enjoyed young to capture its freshness and mineral energy.
