Taste Note: Beautiful color in a dark ruby tone with purple nuances. the wine remained young and quite concentrated in the glass. Magnificent nose with a floral framework, peony, violet, fruity, blueberries, blackberries, and blackcurrant, but also notes of gray tobacco, black truffle, and pepper. We find all the aromas of the nose on a suave and subtle matter, powerful and so delicate. Very nice length. Violet and licorice finish.
Winemaking Process: Manual. Double sorting process (in the vineyard and on the sorting table in the winery). 20% whole bunch. Cold maceration then fermentation. Native yeasts. Aged 18 months in oak barrels (20% new).
Sommelier Advice: We recommend this wine with red meat but we also recommend it with a nice poultry. A poultry supreme with cream and let’s be crazy even better, a nice capon with morels!
