Taste Note: Gastronomic, complex, with notes of rice flowers and Japanese liquor. A woodless Chablis style with medium-high acidity, excellent smoothness, and depth. The flavors are complex and include Custard apple, beeswax, honey, and pastries. Persistent umami flavor.
Winemaking Process: Goutte d’Argent ( meaning Silver Drop in French ), fermented with Japanese sake yeasts. Pascal is the only non-Japanese in the world with access to these yeasts. Harvest by hand. Winemaking in stainless steel tanks with an exceptional average duration of 120 to 130 days, and temperatures around 6 °C during alcoholic fermentation. Sake yeasts are added right after the grape’s inoculation. The fermentation takes place without any addition of sulfur as sake yeasts are too sensitive to it.
Sommelier Advice: Ready to drink. Perfect for dessert. Cellar potential: 3 years. Best serve at 12°C – 14°C.
