Taste Note: A refreshing, zesty palate reveals a citrus core of lifted lemon and lime fruit with hints of green apple and oyster shell notes, finishing crisp and energetic. Lively acidity coupled with a textured mouthfeel from aging sur lie. Deliciously fruity with tangy green apple and lemon peel along with a refreshing crispness.
Winemaking Process: It’s from organically grown grapes that average 45 years of age. Growing on prized “Chateau-Thebaud” granite soils that make up only 4% of the entire Muscadet vineyard. The wine ferments in stainless steel to lock in freshness and flavor and then ages on the dead yeast cells (“sur lie”) for around 9 months to soften slightly and gain even more complexity.
Sommelier Advice: Excellent to pair with a range of seafood such as oysters, mussels, shrimp, and salmon, or try with zesty vegetables.
