Taste Note: Beautiful deep garnet color with purple reflections. The nose: clean and precise, reveals a pretty aromatic intensity of violet, blackcurrant, leather, and black olive, on a delicate vanilla background. The palate is straight and dense, with ripe and present tannins. The aromatic expression: fine and elegant, is oriented toward flavors of blackberry, blackcurrant, violet, and spices. The balance is superb between the richness of the material and the present acidity, which bodes well for good aging potential.
Winemaking Process: Destemming and cold maceration in temperature-controlled stainless steel vats, fermentation with indigenous yeasts. Aged for 18 months in barrels including 20% new wood.
Sommelier Advice: Roast beef in a chanterelle crust. Duck breast with orange. Rack of lamb with Provençal vegetables. Grilled steak
