Taste Note: A nice and intense ink color. The nose is expressive, with black fruit. It shows aromas of cedar and intense tannins. A grand wine: balance, density, texture, structure. It embodies elegance and delicacy.
Winemaking Process: Thirty-year-old vines. Soft extractions aiming fullness and velvety features. Long fermentation at low temperature, followed by a 4-week maceration. The maturing is done after the malo-lactic fermentation, all in new French oak barrels, from the Tronçais forest, on a selection Colbert of Nadalié cooper.
Sommelier Advice: Leg or navarin of lamb, beef stew, venison with cranberries, … all the red meats of character will marry perfectly with this cuvée, but also the cheeses of the Rhone Valley such as Saint-Félicien or Saint-Marcellin. Serving temperature: 15°-16°C
