Taste Note: The nose is intense with lively caramelized apple notes with subtle and soft smoked aromas. The first taste reveals a lovely softness. The mouth reveals a balanced texture with wonderful quince and fruit jelly flavor. This cuvée is noble and powerful.
Winemaking Process: The harvest of the two grapes varieties, Vermentino and Grenache Blanc takes place at the same time, during the first week of October. Fermentation and aging are done entirely in new barrels. The stirring of the lees in the barrel glorifies this cuvée. It takes two years of aging in barrels to reach the aromatic excellence of Inventa Les Vallons.
Sommelier Advice: You will enjoy this cuvée with goat cheese, omelet with truffles, or with seafood.
