Taste Note: A deep purple wine with aromas of blackcurrant, blackberry, and subtle violet, enhanced by cedar and sweet spice. The palate is supple yet full, with velvety tannins embracing ripe dark fruits. Notes of underwood and earthy nuances add complexity, leading to a fresh, elegant finish.
Winemaking Process: From 20–30-year-old vineyards on light soils near the Durance. Hand-harvested, fully destemmed. Fermentation at 18–20°C with short maceration (7–10 days). Aged statically after first racking with aeration.
Sommelier Advice: Serve at 16–18°C. Excellent with herbed lamb chops, roasted lamb, grilled beef, or mushroom pasta. Best enjoyed young but can age 3–5 years.
