Winemaking Process: Hand-harvested from old Syrah vines. 100% whole-cluster fermentation with native yeasts, followed by cold maceration and temperature-controlled vinification. Aged 18–24 months in French oak barrels, with a high proportion of new oak.
Sommelier Advice: Ideal with refined meat dishes such as tournedos Rossini, poularde with morels, or aged beef in rich sauces. Best enjoyed after 7–10 years of cellaring, with exceptional potential for over two decades. Serve at 16–17°C.
