Taste Note: Pretty intense purple color with red reflections. The first nose, delicately caramelized, announces fully mastered aging in oak barrels. Allowed to breathe, this Cabernet Franc expresses itself with beautiful varietal intensity: raspberry, blackcurrant, green pepper, etc., and some menthol notes. The palate is fresh and vegetal with tannins still present as well as notes of roasted cocoa.
Winemaking Process: Organic wines certified by FR-BIO 10, Limestone Sandstone from Brugairolles at 200m altitude. 20% in new barrels, 20% in wooden vats, and 60% in 1 and 2 wine barrels – The wines are drawn off and bottled on a descending and waning moon as well as on fruit or root days.
