Taste Note: The color is deep red with dark lights. The nose is concentrated, opening up on coffee, cocoa, black cherry, very ripe plum, black fruit notes (blackberry, blackcurrant), and black olive tapenade. The mouth is full-flavored with long licorice aromas backed up with young but soft tannins.
Winemaking Process: Harvest by hand followed by destalking and a meticulous selection. The plots for this cuvée are vinified separately. Part of the Syrah is vinified with whole berries. After the free run, the wines age in oak barrels for 15 months. Maturation in oak barrels for 12 to 14 months.
Sommelier Advice: Grilled rib of beef with Camargue salt, roasted goose, and game. The best partner: Young wild boar civet with black olive.
