Grape: Pinot Noir
Taste Note: Garnet red. Complex. Fresh red cherry, strawberry, cassis, and blueberry. Aromas of rose, hints of granite and leather. Complex, fresh, light-bodied, mineral, and persistent. Very fruity, juicy, with fine tannins.
Winemaking Process: Goutte d’Argent ( Meaning Silver Drop in French ), fermented with Japanese sake yeasts. Pascal is the only non-Japanese in the world with access to these yeasts. Harvest by hand. Winemaking in stainless steel tanks with an exceptional average duration of 30 to 40 days, and temperatures around 6 °C during alcoholic fermentation. Sake yeasts are added right after the grape’s inoculation. The fermentation takes place without any addition of sulfur the yeasts are too sensitives to it. Ageing on fine lees, in stainless steel tanks, for 1 year, weekly stirred.
