Grape: Verdejo (85%), Malvasía Castellana (13%), Godello, Albillo, Palomino & Viura
Taste Note: A bright and expressive white with pear, creamy and honeyed nuances, complemented by subtle herbal notes. Broad and textured on the palate, with lively acidity and good volume, leading to a slightly bitter, citrus-driven and persistent finish.
Winemaking Process: Four-hour skin contact, followed by gentle pressing and spontaneous fermentation with native yeasts. Verdejo ferments in concrete, while the other varieties ferment in 600-litre French oak barrels. The Verdejo is aged for three months on lees in concrete, while the remaining varieties age for 14 months in French oak barrels with light toasting.
Sommelier Advice: Serve chilled. Ideal with sushi and sashimi, Peruvian ceviche, vegetable wok, pad thai, gyozas, warm salads, white fish and soft cheeses.
